Tsoureki | Greek Easter Bread Recipe
TSOUREKI | GREEK EASTER BREAD

Greek easter is my favourite time of the year to spend time with family, enjoying good food and all the Greek traditions. I am so excited to share our fluffy Greek Easter Bread recipe also known as Tsoureki. Tsoureki is something I look forward to every year, it’s what makes Greek Easter so special to me and my family.

Ingredients:
3 eggs
1 ½ cups sugar
½ cup of melted butter
2 cups of milk or water
Juice o////f 1 orange and zest
8 gr. dry yeast
1 tbsp mahlepi ground
1 tsp vanilla
2 gr. mastic ground (optional)
½ cup vegetable oil
5-6 cups of all purpose flour.
For garnish: 1 egg ,1tsp water and sesame seeds
Instructions:
All ingredients are at room temperature. In a bowl of lukewarm milk, add the yeast, 1 tsp sugar and ½ cup of flour.
Stir and cover, set aside until the yeast is bubbling.
In a small pot, add the butter and milk over medium heat and stir until the butter melt is warm not hot.
In a bowl put the sugar , eggs and whisk. Add the butter mixture, orange juice and zest.
In another large bowl, add the flour, mastic and mahlepi, butter- egg yeast mixture(from step 3). Using your hands, mix until the dough is really soft. If it is too sticky, use a little oil on your hands and knead a little more.
Cover the dough with plastic wrap and place it is a warm place until it doubles. When it’s doubled we cut small pieces and weigh the dough on the scale to make sure it’s 175grams.
Make the dough into a ball and then into a rope. Use three ropes to make braids. Place the dough in a tray and leave them in a warm place for about 1 hour to double.
When the tsoureki is doubled, egg wash and sprinkle with sesame seeds. Bake for about 45minutes at preheated oven of 350F until golden colour.
