Happy Thursday! So excited to have you here. This week, I will introduce Greek vegetarian meals. There are many meatless, easy to make Greek meals. At iheartgreekfood, we aim to accomplish one goal and that is: GREEK FOOD MADE EASY. Stay tuned, as I will send a weekly newsletter every Thursday.

Revithia (Reh- Vee- thia) | Greek Chickpea Soup
Revithia is a simple, delicious and easy soup to make. It’s perfect for a cold winter day. If you love chickpeas, then I assure you will absolutely love this soup.
Recipe Below :
Ingredients:
1 1/2 cup of dry chickpeas
1 large onion finely chopped
2 bay leaves
1/3 cup of olive oil
Juice of two lemons
Salt and pepper
Hot pepper flakes (optional)
2 garlic cloves minced
In a large bowl, put the chickpeas (Cover with cold water and leave them overnight )
Instructions:
The next day, drain the chickpeas and rinse very well with plenty of water
Place them in a pot with enough water to cover them
Being to a boil for 5 minutes. Strain and rinse well under cold water
In the same pot , over medium heat, put the olive oil and onions. Add the garlic and sauté for about 1-2 minutes
Add the chickpeas and cover with warm water. Add the bay leaves. Bring to a boil and turn the heat down. Let it simmer for about 1 hour until tender.
Add more water if necessary. When the chickpeas are soft, add the lemon juice, salt and little more olive oil. Cook for another 5 minutes
To thicken the soup, purée about 1/2 cup of soup in the food processor and stir back into a he pot.
Add more lemon juice or hot pepper flakes if desired.
Service with fresh or toasted bread or some olives! Enjoy!
